In just three courses I will try to accompany my guests in the heart of Roman cuisine with an appetizer based on small appetizers.
A reinterpretation of the famous saltimbocca alla romana. As a first course I tried to play with the ingredients that cannot be missing from a Roman's table: Fresh pasta, guanciale, pecorino romano and pepper. We will sweeten the end of the evening with a classic coffee tiramisu.

His kindness and our time together in his kitchen was some of our best spent time in Rome. The cooking was fun and the food spectacular!! The best pasta carbonara we've ever had!!
