I will show you all the secrets to making perfect fresh pasta, from preparing the dough to creating the different shapes of pasta. I will guide you step by step in preparing the fillings and sauces that accompany these delicious dishes. You will also learn how to select the right ingredients and choose the most suitable wines to pair with your dishes. At the end of the lesson, we will sit down together to enjoy the fruits of our labor, accompanied by a bottle of Piedmontese wine.

After a visit to the Acetaia Comunale di Modena (Municipal Vinegar Works) in the center of the city, we will go to my home for a fantastic typical Modenese menu.As an appetizer, I will offer you a gnocco fritto, followed by shavings of Parmiggiano Reggiano with different years of aging bathed by Aceto Balsamico di Modena DOP 12 and 25 years.First course: tortelloni ricotta and spinach in old Modena style, with Parmiggiano Reggiano Reggiano flakes, bacon and traditional balsamic vinegar of Modena DOP, or butter and sage.Second course: cotechino in a crust accompanied by stewed beans and spring onions with traditional balsamic vinegar of Modena DOPDessert: Barozzi cake with zabaglioneCoffee and Nocino (typical Modenese liqueur)Vegetarian or vegan menu upon request.

Our tour will start from my house which is located in the center of Baveno, we have a bakery, a shop of typical products and gastronomy, a pastry shop and an ice cream parlor that we will reach on foot in a few minutes: we will take a gastronomic journey into our traditions Piedmontese. Baveno is a small town on the shores of Lake Maggiore and everything takes place around a small square, so we will explore the area and then return to my house and prepare a dinner with the products we have purchased. Together we will prepare the noodles, knead and roll the dough with a rolling pin and then enjoy everything in an excellent dinner

Let's start our journey with an appetizer from the popular culture of recycling, mozzarella in carrozza, and then cross the sea in search of the flavors of Capri, with ravioli capresi with tomato and basil.We will end on a high note, imagining ourselves entering a lemon garden of the coast, while preparing the world-famous Italian dessert: limoncello tiramisu.A culinary experience not to be missed!

Cooking Course on the Gulf of Naples

We will have a unique experience together in our small country farmhouse nestled in the characteristic landscape of Puglia, with expanses of olive trees leading to the sea and a view from above of the entire landscape below.Together we will return to the past as we discover traditions and prepare together the famous orecchiette pasta. Everyone will have everything they need to follow a lesson taught by Maria, our Cesarina. This will be followed by the preparation of orecchiette pasta with tomato sauce, goat's cheese ricotta and fresh basil that we will harvest from our vegetable garden.
