In just three courses I will try to accompany my guests in the heart of Roman cuisine with an appetizer based on small appetizers.A reinterpretation of the famous saltimbocca alla romana.As a first course I tried to play with the ingredients that cannot be missing from a Roman's table:Fresh pasta, guanciale, pecorino romano and pepper.We will sweeten the end of the evening with a classic coffee tiramisu.

Easter lunch always starts with a rich appetizer where as per tradition we find torta Pasqualina , which is a cake with long leavening slightly sweet and which is eaten with typical Lazio salami, corallina, and hard-boiled eggs, then there will be Gran Fritto di Pasqua , with seasonal vegetables like artichokes , and also ricotta cheese and apples, the first course of the Easter tradition will be classic ravioli with ricotta and spinach with a sauce with butter ,sage and parmesan cheese, and then lamb chops a scottadito (lamb) with baked potatoes scented with garlic and rosemary. Dessert is a rich tart with a soft filling made of ricotta aromi and chocolate chips !
