"I would define my cuisine as a" gourmet "cuisine, but of the territory, of the tradition, I like to call it a" country kitchen ". My philosophy does not foresee always having the same menu for a long period, as I believe that follow the seasonality of raw materials. For this reason I like to vary my dishes based on the availability and seasonality of the products. I like to make fresh pasta, use game, poultry, snails and seasonal vegetables, whenever possible from my vegetable garden. Sometimes I also like to propose some fish ".
