We will visit a small dairy farm in Salerno, Unica Bio Dairy Farm, an excellent dairy that has made itself available to guide you in discovering the flavors of the South: mozzarella, ricotta, provola and all the products derived from milk, the white gold.The meeting will start early in the morning, at 8:30 am, because it's at the beginning of the day that the master cheesemakers get to work. You will be accompanied inside the company, located in a bucolic and suggestive place, where you will be able to witness all the production processes of the aforementioned products.At the end of the visit, we will stop for a fantastic tasting in the green.

Tramonti is a magical green and fertile valley, a Unesco World Heritage Site, rich in terraces wrested from the mountain, cultivated with vines and olive trees.the heroic vine-growing of tramonti gives wines of great personality, from vines that are over a hundred years old and pre-harvested.there are numerous indigenous vines, such as tintore, falanghina and ginestra, which imprison in their bunches the history, aromas and flavours of this ancient land.The experience will include a visit to the winery's historic vines (300-500 years old), walking through the rows and the various stages of production;and will end with a fantastic tasting of three d.o.c. wines, in a locus amoenus, accompanied by samples of traditional and typical Campanian products.

A magical experience in an oasis of beauty a stone's throw from the archaeological site of Paestum, featuring a winery located in the heart of the Cilento National Park.San Salvatore wines bear witness to an ancient winemaking culture, which has given birth to some of the most iconic wines of the entire Campania region. We will have the opportunity to discover the processes of grape processing and transformation, from harvesting to wine production. I will accompany you on a tour of the winery, lasting about two hours, which will end with an enchanting tasting, in an evocative location, of four of the region's finest and most characteristic wines. This will be accompanied by a light aperitif with rustic and poor products, such as taralli cilentani.

I'll be waiting for you for my Campania cooking class to discover the history and origins of local ingredients, learn how to pair flavors, and how to choose the best fresh produce.We start with a typical local dish: eggplant meatballs, made with basil, Parmesan cheese, capers and olives. Then we continue with a great classic, potato gnocchi, topped with tomato and mozzarella sauce, a typical Sorrento recipe.To finish, torta caprese, a dessert born in Capri, very popular in Campania, made with almonds, chocolate and citrus fruits from the Amalfi coast.At the end of the course we sit at the table and eat the dishes we prepared together.My cooking is typical Campanian, with traditional dishes, using first-rate products.

A stone's throw from the Amalfi Coast, in Cava de' Tirreni, we offer a unique culinary experience in a villa with a garden to discover the flavors of the Amalfi Coast.We will begin with a toast with wines from our Colli di Castelfranci winery, paired with bruschetta with anchovies from Cetara.We will prepare together two first courses typical of the Amalfi coast and Campanian cuisine: a lemon-scented risotto alla pescatora (with baby squid, clams, mussels, cuttlefish, shrimp, scampi), and a spaghetti with clams.To end the meal, we will taste a homemade tart with our own jam.

This experience in Salerno includes a market tour, a typical four-course menu with starter, pasta, main with side dish, dessert and wine included. What will be on the table? The course involves making three types of pasta typical of the Campania tradition: pasta patate e provola, scialatielli allo scarpariello, and classic Neapolitan pasta fritters. You will make scialatielli with your own hands, which we will then season with cherry tomatoes seasoned in a pan with oil, onion and oregano. All accompanied by excellent wine from Campania.

With this culinary journey I will let you taste simple but very tasty dishes. I will show you how to prepare homemade cavatelli, made with only semolina flour, water and a little extra virgin olive oil. You will then get to enjoy them with the sauce, provola campana cheese and grated parmesan cheese. The chopping board will consist of prosciutto crudo, soppressata, capicollo, dry sausage, pancetta, and buffalo bites from Campania accompanied by bruschetta with tomatoes. The second course, sausage and borlotti beans, will be embellished with tomato and spicy chili pepper that will give it the right character. Finally, I will let you taste the two variants of St. Joseph's zeppole: one with puff pastry and cream and the other fried. I am waiting for you.

This amazing tasting experience consists of a lunch of fresh fish, caught in the seas of our Neapolitan Gulf, cooked according to the recipes handed down to us by tradition and sometimes with more innovative, fresh and original ones.
