Hi from Paola!

"In Gubbio You can believe to dream … instead everything is there, firm and fixed in the stone.” Hermann Hesse, 1907. This quote by Hermann Hesse is perfect to describe the fascinating Umbrian town built entirely of stone. Here, in a historic building that has an enchanting view of the entire city, we meet Paola, our Cesarina. Paola has us enjoy the local gastronomic specialties, from 'cappelletti all'eugubina' (stuffed pasta), to Friccò (mixed meats cooked in tomatoes) and finally Pinoccate, an ancient Umbrian sweet that suggests Christmas with the family.Paola's passion for cooking, and the particular attention she gives to strictly respecting traditional dishes, involves her entire family, starting with her paternal grandfather. Today her point of reference in the kitchen is undoubtedly her mother. Paola wants to transform her passion for cooking into a business and the best opportunity to reach this goal is to become a Cesarina!

We had a lovely experience with our host, Paola! Paola was warm, hospitable, and engaging. She has a beautiful home, and she made us feel very comfortable and welcome. We also had the pleasure of meeting her two daughters and husband, who sat down and shared the meal with us after we cooked. We were delighted to learn not just how to make ravioli and tiramisu but also about some fun Gubbio traditions and customs, like the Corso dei Ceri! We would definitely recommend this experience! (Note: we did not participate in the market tour part of this experience because the markets were closed due to holiday.)

I would not hesitate to recommend Paola or the experience. She was a gracious, patient, generous host. We learned several recipes, but she also gave us a fascinating education on the history of Gubbio. The evening could not have been more perfect. I can't wait to get home and try some new skills. Grazie, Paola (and family)! It was an experience I won't ever forget.
