As we take in the stunning view of the sea from the vineyard, I'll begin the class by sharing the fascinating history of our pesto from Spezia. I'll explain the traditional system of using the best basil plants and carefully selecting high-quality ingredients to ensure the best flavor. Then, I'll demonstrate the two methods of preparing pesto: using a mortar and pestle or an electric blender. I'll also give you tips on how to properly store the pesto to keep it fresh for as long as possible.After we've made our pesto, we'll package it up for you to take home and enjoy. You can savor the fruits of your labor either when you return home or on a rocky cliff overlooking the sea. The class lasts about two hours, and we'll provide you with water and wine from the local Possa winery.

In this experience, we will prepare dishes of poor origin in the manner of our "elders". Nicola's grandparents were owners of the oldest La Spezia tavern "Da Caran" from which we draw inspiration. We will serve the appetizer with a welcome drink by the pool and then move to the table under the patio in the garden. We will prepare fried squash blossoms and croutons with anchovies in Monterosso oil, potato gnocchi with pesto prepared in front of you, mixed vegetables from the garden stuffed Ligurian style and to finish the inevitable tiramisu in a jar. All washed down with an excellent white wine from our area.

The "panigaccio" is a thin disc of unleavened bread, which is baked between two terracotta texts previously placed to heat on the open flame of the fireplace.... said so, it seems a very simple thing, while in reality, multiple factors intertwine to allow the success of this typical and delicious product.In this experience, we are going to see how to make a batter of the right density and learn the secrets of its baking , which occurs only and exclusively when the texts reach a certain temperature.After making them, some panigacci will be boiled to be enjoyed with, oil and cheese , pesto , mushroom sauce,after which we will make others, which while still warm and fragrant, we will go to enjoy with locally produced cold cuts.
