 Renata Maria's dinner table is all about conviviality, love of food and good conversation.

Our Cesarina welcomes us into her home in Milan, a stone's throw away from the Basilica of Santa Maria delle Grazie, to share her passion and memories of her family's culinary tradition. "As a child I always watched my grandmothers in the kitchen, their mastery and local traditions have always fascinated me as they're so different: one was from Milan, the other Sardinian, but they had the same passion... I can still smell the aroma of figs, apples and quinces from the orchard in Sardinia and can still recall the taste of mushrooms with polenta from the house on Lake Como. These traditions have enchanted me ever since." 


Countryside flavours


For a fresh menu that evokes the flavors of the countryside, Renata Maria serves a starter of asparagus with fried egg, a popular recipe in from the countryside of the Lombardy region, where the cultivation of asparagus is particularly widespread. The first course is a delicacy of Lombard cuisine, 'risotto al salto', cooked in a pan to create a delicious crust, which makes it even more pleasing and a little crunchy, with the addition of stewed artichokes and served on taleggio cream.

Next, a great classic of Milanese cuisine, the 'cotoletta', one of the most famous Milanese dishes in the world. Its secret lies in its golden and crispy breading, which our Cesarina brings to the table with tomatoes and rocket and a side dish of vegetables and seasonal salad. Finally, to sweeten the palate, a creamy dessert with forest fruits.
