Bologna (BO) - Emilia Romagna

Maria’s house is very close to Bologna’s botanic garden, one of the most ancient of Italy. It is situated in the university area of the city and is a pleasant spot in which to take a break and a breath of fresh air during a work day, or perfect for tourists looking for the green parts of Bologna.

After visiting the botanic gardens and crossing through the university area, we indulge in a taste experience in this Cesarina’s house. Maria is originally from the Basilicata region in the south of Italy, but she has adopted the Bologna lifestyle and culinary traditions of its area, without at the same time forgetting her roots.

The Pasta Queen

Maria loves homemade pasta, she delights in this pleasant culinary activity and makes us savor different types: from the classic tortellini, to lasagna and tagliatelle which are typical of the Bologna tradition. She likes describing the various steps needed to make the ultimate tortellini, the perfect lasagna, or the exact width of tagliatelle.

For this taste experience our Cesarina makes, of course, tortellini in broth. Before the tortellini, which is the first course, she serves a sumptuous appetizer: a board full of different cold cuts, parmesans and crescentine (small round focaccias which come from the Modena region) - so mouthwatering! The second course is roasted lamb with potatoes, with a side of fresh mixed salad. The dessert is incredibly delicious: fried custard cubes, with crispy edges and a soft, creamy center.
