Bologna (BO) - Emilia Romagna

A maze of alleys and suspended passageways, covered bridges and small windows that tells the story of an entire community. We are in the ancient Jewish ghetto set right in the middle of the medieval historical town center of the food-loving, cultured and welcoming city of Bologna.

It is here that we meet Manlio, our Cesarino. Cooking has always been an important moment for gathering together as a family. Contrary to the southern stereotype, in his family all men are great home cooks. From his grandfather he learned 'culinary multitasking': cooking every Sunday for a large Sicilian family requires great organizational skills. His father, on the other hand, an engineer by profession, passed on his precision and an eye for detail that can be more important in cooking than in the overall organization.

Over the course of his life, Manlio has had the opportunity to spend several years abroad. As we all know, what better way is there to exemplify one's culture than through cooking?
