We are in Assisi and you absolutely have to taste the typical dishes of the city.Let's open the lunch or dinner with the "Torta al Testo is the daughter of peasant culture, where bread was a luxury for poor families.The ingredients are vjust water, flour and baking soda.Its shape is typically round, once cooked it is cut into wedges and filled with what is most typical in Umbria. The most classic filling is with sausages and country herbs, or with typical cold cuts and cheesesLet's continue with the Strangozzi, they have a centuries-old history and a particular name.Obviously we will taste the Strangozzi with the Umbrian Black Truffle, a local delicacy.At the end, the Rocciata di Assisi, the origin of the name derives from the word "perched", which in the Assisi dialect means round.

Three-course menu typical of Assisi

As per tradition in my family and in all Umbre families on Christmas Day we eat Tortellini. Absolutely and strictly tortellini are eaten in a good meat broth and the boiled meat is accompanied by tasty sauces. The Christmas atmosphere makes this moment more magical , especially if to welcome you there will be a bruschetta cooked on the fireplace and seasoned with our extra virgin olive oil produced from the olives of our olive grove that surrounds the house. There will be no shortage of local meats and cheeses, typical desserts of the moment and homemade liqueurs made by me. You will return to your homes with memories of Christmas in Assisi.

Christmas lunch as per tradition

The ancient art of Norcineria, knowing how to process pork, is at the heart of this special experience.We will present typical Umbrian cured meats, sausages, pork meat to be enjoyed strictly roasted on the grill, all accompanied by homemade bread and seasoned with the Km 0 evo oil from our olive grove, cultivated with passion and produced by my husband.We will taste the food with vegetables from our garden and an excellent local wine.In the summer season the meat will be cooked in a barbeque in the garden, where you can then have lunch or dinner while enjoying the view of the Umbrian Valley hills.In the winter months the fireplace inside the house will be the star of the experience.

I will explain step by step how to do it, how much flour, how much salt and how much love to put in.You will be my welcome guests and we will experience a culinary journey full and intense with flavors, fragrances and imagination.There will be no shortage of good local wine and bubbles to celebrate.
