I would describe my cooking as deeply Mediterranean, and it’s no coincidence that I chose Sicily as my main inspiration: it’s the most authentic south, rich in bold flavors and traditions I truly love. Especially when it comes to eggplants, which I cook in a thousand different ways! Growing up in Milan, though, I learned to appreciate all kinds of cuisines, beyond regional boundaries. In the end, only one thing matters to me: that it tastes good.
