Your experience

In Rome, we celebrate the art of "scarpetta," dipping bread in sauce and enjoying it to the last drop. In Tuscany, this tradition is known as "Ritocchino." During this culinary experience, we will explore the secrets of dishes such as amatriciana, puttanesca, moscardini in guazzetto, zucchini pesto, and cream cheese. You will have the opportunity to dip the delicious Garfagnina potato bread (from the historic region of Garfagnana in the province of Lucca) and discover the recipe for the ancient ricotta bread, praised even by Cicero. The latter is baked on bay leaves, and we will show you how to make it with a simple recipe based on flour, ricotta cheese and egg. Finally, don't forget the delicious sweet pancakes.

My kitchen is a nest of scents and experiments. The queens of my cuisine are aromatic herbs and products from my small vegetable garden, always present in my pots. The kitchen has always been the most important place in my home; whether small or large, it represents safety and a starting or returning point with its warmth and colors. The warm and enveloping smells of my childhood are always present. My Lazio and Tuscan origins blend with an Emilian touch that my mother-in-law has introduced to my recipes.
