- Spiedo Bresciano (traditional meat skewer)
A delicacy of the Upper Garda Park is spiedo. The recipe for Brescia-style spiedo is based on meat, potatoes, and sage leaves from our garden, which are placed between each piece to give the meat a pungent flavor. It is cooked exclusively on an iron/steel rotisserie and the fire is fueled with wood embers. It is cooked very slowly for 3 to 4 hours and basted with Tignale extra virgin olive oil and alpine butter to keep it tender. The cooking class includes the preparation of the "prese" (portions of meat), skewering them on the spits and cooking them for about 3 hours and 30 minutes.
