- We had our cooking class in a small town on the coast where we invited into Ivan's modest home to prepare and enjoy a delicious three course dinner. We learned how to tell if a fish is really fresh and how to clean one, as well as how to make sure clams or mussels are really. We had a shrimp antipasto, a clam spaghetti and a sea bass wrapped in foil with roasted potatoes. We even learned a new technique for roasting potatoes. Ivan was professional yet personable personable and we really enjoyed our time with him. We also felt lucky because we learned he had placed fourth on Italian Iron Chef so became much in demand as a cook
