If you’re looking for a dish that’s flavorful, light, quick and easy to prepare, this recipe is just what you need. Baked stuffed porcini mushrooms are a classic of the fall and winter seasons: you can enjoy them as an appetizer, a side dish, or even paired with focaccia for a midday break. You only need a few ingredients and you’re all set. Our version uses a filling made with eggs, Parmesan, and breadcrumbs, but feel free to get creative by adding chopped vegetables or even trying a fully vegan variation.
Boletus mushrooms are considered quite prized, loved for their intense aroma and delicate flavor. In the forests of Tuscany, thanks to ideal climate conditions, they grow wild in many areas, so much so that the region accounts for about one fifth of Italy’s total production. They are especially common in Lunigiana, Garfagnana, Mount Amiata, and the Pistoia Mountains.
