Savoury Courgette Pie Recipe
Courgette savoury pie is a quick and easy dish to make, ideal for any occasion and with just a few ingredients that make it tasty.
Ingredients
- For the dough:
- 250 g semi-integral flour
- 100 g water
- 50 g of extra virgin olive oil
- For the filling:
- 1 kg courgettes
- 100 ml vegetable cream
- 2 tablespoons nutritional yeast (or parmesan cheese)
- 1 shallot or spring onion
- Integral sea salt
- Pepper
Method
- In a large bowl, combine the semi-wheat flour, water and extra virgin olive oil and knead until smooth and homogeneous;
- Let the dough rest for about 30 minutes;
- After resting, roll out the dough on a baking tray, leaving a border of about 2 cm;
- Grate the courgettes and squeeze them in a clean cloth to remove the water they contain;
- Sauté them in a pan for a few minutes with extra virgin olive oil and a sliced shallot or spring onion;
- Let them cool and mix them with the vegetable cream, nutritional yeast or Parmesan cheese, salt and pepper;
- Pour the mixture into the baking tin sealing the edges and bake in a hot oven at 180° for about 30 minutes;
- Wait a few minutes before cutting and serving.
