Nowadays, Milan is a primary tourist destination throughout the year. The selection of attractions is vast. Even if you abandon the usual classic tour of the monuments, museums and squares, the markets scattered around the city can be a fascinating discovery. Places like the many farmers' markets on the outskirts of Milan, where you can buy locally produced seasonal products. That's what Beatrice, our Cesarina, loves to do! Enthusiastic about healthy cuisine based on vegetables, Beatrice attended a macrobiotic and ‘natural’ cooking school to specialize in the combination of ingredients, the organization of meals and the use of local and sustainable ingredients. Beatrice feels that it is important to offer the option of an 'inclusive' cuisine. Respect for the land comes from not only using recipes that have been handed down from generation to generation, but also from searching for quality ingredients that have a short or very short supply chain. At Beatrice’s table, we can enjoy a journey through the flavors of seasonal vegetables, making traditional recipes both creative and surprising.

A little, charming place "old Milano", a small balcony full of aromatic herbs, the flavour of vegetables: here are the ingredients of this cooking class, which is a journey into the countryside, using products that respect nature, seasons and land, coming from historic farmhouses just outside the city. A plant-based menu that will be appreciated by everyone, vegans and omnivorous - tradition mixed up with modernity, a description that perfectly suits Milano!  Polenta is a traditional food in Lombardia: here it becomes a tasty appetizer thanks to caramelised vegetabels.  Millet is and ancient cereal and was a staple food for Lombardia until a few decades ago: we will rediscover it making gnocchi using millet instead of potatoes.  At the end, a vegan tiramisu as good as the traditional one!

For those who are sightseeing and want a break from the hustle and bustle of the city, for those who want to celebrate a romantic occasion, for those who love the English picnic ritual: you choose where, I'll take care of the picnic! Delicious proposals prepared with local and organic ingredients, a cool wine and some colorful cloths. The outdoor restaurant is ready for you! A few examples of locations: the Villa Reale Gardens (a short distance from the Duomo), The Sempione Park behind the Sforzesco Castle, or some unusual gardens such as the Guastalla Gardens near the Tribunal or the Basiliche Park in the Navigli area. How many scraps do we throw into the dustbin every time we prepare a meal? Yet, there are so many delicious dishes that we can prepare with ease and a little creativity using scraps, stems, leaves! Ancient gestures, to be rediscovered, that our grandmothers knew well: a classic of peasant cuisine is soup with pane veccio, which in Lombardy was called pancotto Peels, for example, are rich in minerals and can become a tasty appetizer, also to increase the fiber quota in the daily diet (another reason to choose organic vegetables!). Beatrice was very welcoming and friendly, we exchanged cultural information which was delightful. We learned so much about the Italian cuisine and she taught us how to make 2 wonderful pasta dishes from scratch and tiramisu that tasted really good, and Beatrice also gave us some of her secrets and tips in cooking which were really helpful.

I have been in Italy for almost two weeks now, travelling to many areas for incredible culinary delights. The meal that Beatrice and I made was by far my favourite. I immediately felt welcomed and comfortable with her. She was so knowledgeable about the food and traditions and it was lovely to learn from her.
