A cook both professionally and for pleasure, our Cesarina Annamaria boasts many culinary experiences both in Italy and various parts of the world.

Milan Classic Cooking Class

During this cooking course you will learn how to prepare 3 recipes: a typical appetizer from my area, a fresh pasta dish and a dessert.  Under my guidance you will learn how to make the dough, roll out the pastry and prepare a fresh pasta following my family's recipes.  Each participant will have his or her own station and will be actively working, equipped with a gremband and a handout where the recipes will be explained, with ingredients and steps.  We will also prepare together an excellent dessert from my family recipe book.  At the end of the course you can relax at the table, enjoying a 3-course menu, whether lunch or dinner, including appetizer, main course and dessert that we will have prepared together with drinks included (local wine, water and coffee).

If you would like to have an authentic taste of Milan, you can’t miss out on Ossobuco and saffron risotto.  The origins of Risotto are lost in legend. Some claim that it was invented by the cook of a noble Sicilian family that moved to Milan; the cook could not find the ingredients to make rice arancini and she decided to prepare rice flavoured with saffron. Others say that this dish comes from the kosher medieval tradition, brought to Milan by Jewish Sicilian merchants.  What we can be sure of is that risotto is always accompanied with the traditional Ossobuco, cross-cut veal shanks braised with vegetables, white wine and broth. It’s a winning combination that is one of the city’s emblems.  In this course, you'll learn to prepare these two Milanese classics: Ossobuco and Saffron Risotto.
