Mesciua Ligurian Soup

On the coldest days, there’s nothing better than sitting down at the table and enjoying a rustic dish that transforms simple, wholesome ingredients into a burst of flavor that warms both heart and palate.

Today, we’re heading to Liguria to discover a traditional soup from La Spezia made with chickpeas, beans, and farro: mesciua. In the Ligurian dialect, “mesciua” means “mixture”, and the name hints at its origins. According to tradition, this dish was created thanks to the ingenuity of Ligurian women who would go to the port docks and collect the legumes that fell from the sacks unloaded from ships. The ingredients were therefore somewhat accidental, and nothing stops you from adapting the recipe to your own taste, for example by replacing farro with wheat berries.

Preparing mesciua is simple, though it requires a bit of patience because the legumes need to soak, but the final result will definitely reward your wait. A perfect example of humble country cooking, this soup balances proteins and carbohydrates, and when served hot—just how we recommend—it becomes the perfect comfort food for chilly winter evenings.

Ingredients

  • 250 g dried chickpeas (about 1 1/3 cups)
  • 250 g dried cannellini beans (about 1 1/3 cups)
  • 100 g farro (about 1/2 cup)
  • Water, olive oil, salt, and pepper to taste

Method

  • The night before, soak the chickpeas and cannellini beans in two separate bowls of cold water.
  • After soaking overnight, drain and place the chickpeas at the bottom of a large pot, then the cannellini on top.
  • Cover generously with water and cook without stirring for about one hour.
  • Rinse the farro and add it to the pot. Continue cooking for about another hour. If needed, add more water: the soup should be liquid but with a hearty, full texture.
  • Season with salt at the end of cooking.
  • Ladle into bowls, drizzle with a little olive oil, and finish with plenty of pepper. Buon appetito!
