

When we think of Altamura and its typical products, the first thing that comes to mind is its famous bread, which since 2003 has been awarded the DOP designation.
But in Altamura there is another baked product worthy of note, perhaps less well known than bread, but just as good and indulgent. We are talking about the Rosata Cake, presented to us by our Cesarina Sandra: we are sure that for many of you it will be a pleasant discovery!
The Rosata Cake
It is an almond-based cake typical of Apulia, whose recipe comes from Toritto, a town known for the production of a variety of almonds that are soft and intensely flavored, particularly suitable for making desserts.
The recipe is ancient and has been passed down from generation to generation. Its distinctive feature lies in the absence of butter and flour: the Rosata Cake is in fact made with eggs and sugar (and almonds, of course). An easy and quick recipe with just a few simple ingredients, which must naturally be of excellent quality to achieve the “one slice leads to another” effect.
Soft, with a moist crumb and a delicate flavor, this cake is suitable both to finish a meal and to accompany the classic afternoon cup of tea.
