    Beans, once cooked in the famous "fiasco," evoke wonderful memories, like those I experienced with my grandmother. I let the beans soak for a few hours before slow cooking carefully, avoiding boiling them too hard so as not to risk defibrating them. Usually, for a stewed bean dish, boiling takes place the day before. The sausage, strictly mixed with garlic, gives off a sublime aroma when it is still prepared according to the old tradition, which is still found here in Maremma. The garlic clove and sage are indispensable ingredients, like a great concentrate of flavor. The sausage, precooked without piercing it, blends perfectly with the other ingredients: a few minutes of cooking and the dish is ready.
