I am from Florence, but I live mainly in Maremma, where I run my business. It is here that I learned how to prepare the famous Tortello Maremmano. This is not a simple raviolo: its structure is imposing and its filling, although composed of simple ingredients, is made unique by the right mixture of them.
It is an excellent first course, served with some melted butter, sage leaves and local pecorino cheese. I invite you to come and prepare it with me, you will not regret it.
