    We propose a spring menu that ideally unites the Castelli di Jesi with the Castelli Romani. Protagonists of the dinner will be, among the vegetables, artichokes, peas and broad beans; then ricotta, pecorino and guanciale for hand-pulled ravioli; and finally rabbit, which ideally links Marche and Lazio, perhaps the two Italian regions where it is cooked most often and best. The menu includes raw artichoke salad, Roman ricotta ravioli with pecorino cheese fondue and "vignarola" (sautéed broad beans, peas and artichokes), and rabbit in porchetta accompanied by Roman-style artichokes. To conclude a classic Judeo-Roman pastry, ricotta and sour cherry tart. The dishes will be accompanied by Verdicchio dei Castelli di Jesi and Frascati Superiore.

    In our family, the kitchen has always held a significant place. With roots in both Marche on our maternal side and Tuscany on the paternal side, my siblings and I inherited a passion for cooking from Grandma Chicca and Grandma Delia, but above all, from our mother Giannetta. We received not only the love for cooking but also the family recipes, books, and even antique dishes and cookware. Even today, we gather for holidays and special occasions in the family villa in Jesi, reveling in the joy of cooking together. Our cuisine is deeply rooted in the local traditions, relying on the products from our sea and countryside. While firmly grounded in the folk gastronomic culture, our culinary approach has always carried some 'bourgeois' accents, both in preparation and presentation. Our personal stories, as children of the Marche region who have lived in various parts of Italy, have over time enriched our menus with influences from the diverse relationships we've cultivated, always centered around the table. Our home, a historic villa in the heart of Jesi, amidst the Verdicchio castles, is well-suited to welcome guests with whom we'd love to share our passion for our cuisine and our land.
