My name is Luca, and in my kitchen in Madrid I invite you to discover the art of Roman Pinsa through a hands-on course, where the simplicity of the ingredients is transformed into something extraordinary.
Together we’ll prepare the dough from scratch: I’ll guide you step by step through the technique and reveal the secret of the flour blend that makes Pinsa unique and different from any pizza or focaccia you’ve ever tried.
Then we’ll move on to the most enjoyable part: we’ll work with a pre-fermented dough, so you can focus on shaping, rolling out and baking, truly experiencing the process of creating a perfect, light and fragrant Pinsa.
Finally, we’ll taste the result: a base that’s incredibly crispy on the outside, soft on the inside and surprisingly easy to digest.

This makes me nostalgic for the flavours of home, but also flexible with ingredients and open to culinary influences, thanks to my experiences in Spain, China, Sweden, France, and the Netherlands. I am very much an “anfitrión”, as they say in Spain: I enjoy hosting small groups of guests, cooking for them, and making sure they feel at ease. I am especially skilled in pasta (including fresh pasta), risottos, desserts, and dough-based recipes. My home is welcoming and open to anyone who wants to discover my Italian cuisine. I speak Italian, Spanish, English, and French; my partner is Portuguese, and I can also arrange to host Chinese-speaking guests.
