The Pappa al Pomodoro of yesteryear, passed down from my grandmother, is a true gem of unique flavors and aromas that evoke family history and tradition.
My cooking is an authentic tribute to the memory of my grandmother, passed down with deep respect and devotion. This dish, born of a poor tradition, was an essential element in the kitchens of the Florentine countryside, served to feed the stomachs of peasants with what they had on hand. Bread, tomatoes (carefully preserved in boiled jars for the winter), onions, carrots and wild herbs were essential ingredients. This is the authentic origin of Pappa al Pomodoro: an invention born of necessity but capable of delighting the most refined palates.
