Hi from Enza!

Siena is the land of rolling hills and ancient flavors, history, tradition, medieval villages. The land of Siena has always produced excellent products: a still uncontaminated territory that offers olive oil, pork and beef, vegetables and aromatic herbs. Then there is the wine! The cuisine of this area is really popular, poor but without sacrifice, like the one we can taste at the home of our Cesarina Enza. "I love good food, but above all raw materials which must be excellent. I own a vegetable garden and a chicken coop. I supply myself from excellent producers, both for food and for wine."

Enza was amazing! She made my daughter’s birthday so special, with a cake they made together, candles, party hats and a happy birthday sign! The cooking was fun, delicious and we learnt so much but just had a really fun time

We had the absolute best time learning how to make pasta with Enza. We were surprised to find that it was just my husband and I in the cooking class and loved it! After cooking we enjoyed our meal together. We felt at home. We couldn't recommend this experience enough. Thank you Enza!

On Monday,, 11/13/2023 my wife booked a dinner with a local host. We arrived at Enza’s home, she instantly welcomed us and invited us to her kitchen. Enza had the finest local ingredients, including olive oil from her parent’s olive grove. She had local bread, salami, fresh ricotta, pecorino, parmigiana, and fresh herbs from her garden. She also had red and white wine, and sparkling and still water. Prior to the first course she asked what we would like for dessert, we opted for a chocolate cake. Enza started with the cake, so it would be ready in time for dessert. Now to the appetizer!! A sliced tomato with basil, salt and pepper, toasted bread with olive oil, salami, and pecorino cheese. Simple but absolutely delicious and perfectly presented! Next we prepared the primi, ravioli with ricotta and parmigiana cheese. Enza prepared the filling and made the first batch of pasta dough, and I made the second batch. Again, so simple but so delicious. I’ve made pasta before, but never been taught technique, now I have a new skill! There was some leftover dough, so we turned it into spaghetti noodles and tagliatelle noodles. The next course, the secondi was a beef stew, stewed in chianti wine in a pressure cooker for three hours (started before we arrived). The final course was the cake that was started before the appetizer. Enza served it with frozen cream, not a flavored ice cream, but frozen cream. Another wow moment, the cake was spectacular and paired with the frozen cream, absolutely amazing! We had a great conversation with Enza about life in Siena, and her kids with school. This is absolutely a memorable night, and if anyone reading this has the chance to book a dinner like this, do not hesitate, I would imagine that anyone who takes the reservation will be great, but if you’re in Siena and get to have this experience with Enza, you will be wowed! Enza also provided us with the recipes, so we can try to do replicate it at home! Last night we ate the leftovers, they were so good!

Absolutely the highlight of my trip to Siena!! There were 6 people in our group and each of us had a wonderful evening with Enza. The instructions were easy to follow and Enza made the class informative and fun. Not to mention the meal we prepared was DELICIOUS !!! Enza was personable and welcoming and I will fondly remember that evening for a long time! Would recommend Enza 100%.
