My cuisine is primarily based on the culinary tradition of my beloved Puglia. The dishes I passionately prepare for my family range mainly among delicious first courses, such as baked pasta timbale, handmade orecchiette with turnip greens, cavatelli with fresh sauce and marzotica ricotta. Among the specialties of Puglia, we cannot do without panzerotti, pettole, cartellate, eggplant parmigiana, potatoes rice and mussels, fava beans and chicory, vegetable timbale, and zeppole with custard cream. My cuisine is a tribute to the authentic flavors of Puglia.
