Umbria, my home region, boasts a rich culinary tradition deeply rooted in its rural heritage. My cooking draws inspiration from these traditional dishes, such as *torta al testo*, homemade tagliatelle, ravioli, and cappelletti, as well as *brustengo*. Each dish is paired with a selection of our finest cured meats, prosciutto, and cheeses, all perfectly complemented by exquisite local wines that celebrate the authentic flavors of our land.

This was a wonderful class! I have taken several pasta making classes in the past, but this was by far the absolute best. Francesca and her family were great. They were so patient and helpful for my little niece. Their home was warm and inviting. I highly recommend booking with Francesca.
