My cooking is mainly inspired by Roman tradition, made of simple yet flavorful dishes that tell the story and soul of the city. I also love to draw influences from other regions: from Sicily I bring the intense scents of the sea and citrus fruits, and from Tuscany the genuineness of countryside flavors and rustic preparations.The result is an authentic yet varied cuisine, combining family recipes, travel memories, and the desire to share not only food, but also the culture and emotions hidden behind every dish.
