My cuisine aims to rediscover the flavors of the past, simple and convivial. We have fun tackling even elaborate preparations, learning to cook with what we have without letting tradition become a constraint or stress. It's called comfort food, but it's primarily food for the mind and heart. For me, this means cooking for myself and others, creating dishes so delicious that they bring silence and make us forget everyday problems for a couple of hours.
