Garden Vegetable Frittata

With spring just around the corner and longer, brighter days arriving, fresh garden produce takes center stage on our tables: tomatoes, zucchini, eggplants and many other vegetables return to market stalls, ready to add color and flavor to our dishes.
Today we’re sharing a rustic, simple yet flavorful and genuine recipe suggested by our Cesarina Elena from Agliana: garden vegetable frittata.
Similar to a ratatouille omelette or a Spanish tortilla, this frittata is a great solution when you need to prepare something quickly. It’s delicious and healthy, as it follows the rhythm of the seasons, and sustainable too, since it highlights fresh vegetables that can be bought from your local greengrocer, supporting small local producers.

Ingredients

  • 4 eggs
  • 4–5 zucchini
  • 4–5 zucchini blossoms
  • 2–3 fresh spring onions
  • 3 ripe tomatoes
  • 4–5 basil leaves
  • Extra virgin olive oil, salt and pepper to taste

Method

  • Slice all the vegetables and cook them in a non-stick pan with a drizzle of extra virgin olive oil.
  • Once cooked, add the beaten eggs and cook for about 3–4 minutes.
