    Spring is the season of renewal and authentic flavors. For us, it means fresh asparagus and fragrant herbs. The extraordinary asparagus from Zambana, a small town just a few kilometers away, often finds its way to my table, accompanied by edible flowers and sweet, seasonal strawberries.

    From these fresh ingredients comes my spring menu: rustic toasted bread with ricotta and our delicious carne salada, a creamy risotto with white asparagus adorned with edible flowers, and a fresh, colorful, and irresistible strawberry tower.

    We organized an aperitivo-lunch with Cesarina Anna as the first stop on our group trip (19 people) to Trentino. The experience was wonderful; through a menu with various Trentino dishes, Anna explained the history of the local products and introduced us to lesser-known recipes, even demonstrating how to prepare them (potato tortel).
