Today we present a dish that reflects the colors of the warm season: red and green. A simple yet flavorful dish, also suitable for those following a vegetarian diet: pepper nests with broad beans and baby broad beans. The recipe is shared by our Cesarina Luigina from Sava, in the province of Taranto.

“At the heart of this recipe are typical dishes and ingredients from Puglia: broad bean purée and fresh broad beans cooked with a sauté of spring onion. I then added my personal touch by using the broad bean purée as a filling for red peppers.”

A simple and colorful vegetarian dish that brings the flavors of the warm season to the table

Ingredients

  • 1 red pepper
  • 200 g broad bean purée
  • 200 g fresh broad beans
  • Extra virgin olive oil to taste
  • 1 fresh spring onion
  • Pepper and mint to taste

Method

  • Cut the peppers (preferably red) in half, season them with salt and olive oil and roast them lightly in a hot oven.
  • Prepare the broad bean purée, adding olive oil and pepper to taste.
  • Shell the fresh broad beans and sauté them in olive oil with the spring onion until softened. Season with salt, add fresh mint and set aside.
  • Fill the peppers with the broad bean purée and the fresh broad beans, then drizzle with extra virgin olive oil.
  • Return briefly to the oven (you may also add a light gratin with grated stale bread, pepper and chopped mint).
