You’ll discover the excellence of Umbrian norcineria (traditional pork butchery), tasting its products alongside freshly baked bread and the finest local wines. To end on a sweet note, we’ll prepare zuppa inglese, a traditional spoon dessert from the countryside.

I’m passionate about local, traditional, and regional cuisine because it tells the story of the land and its people. That’s why I often try typical recipes, seeking out authentic ingredients I’ve discovered through my travels or direct contact with local producers. I believe that high-quality ingredients and sustainable choices are the foundation of good cooking. I’m deeply familiar with the flavors of central Italy—my life unfolds between Lazio, Tuscany, Abruzzo, and Umbria, regions full of exceptional products I proudly use in my dishes. At my farmhouse in Umbria, I cook with organic vegetables from our garden, honey from our bees, eggs from our hens, mushrooms from nearby woods, and amazing ingredients from local artisans, many of whom are renowned in the gourmet world. But I’m also curious and love exploring new flavors. After living for several years in the United States, and thanks to the multicultural market at Piazza Vittorio in my native Rome, I enjoy experimenting with global cuisines and letting the world inspire my cooking.
