    Course on making cavatelli or fusilli pasta with local flour (durum wheat). Cavatelli are served with ciambottella sauce, pulieio sauce, broccoli or broad beans and pecorino cheese, depending on the season. Fusilli are served with ragu or a simple tomato sauce. Platter of local cold cuts (soppressata, sausage with fennel, prosciutto), local ricotta, Carmasciano pecorino cheese, rustic vegetable salad, pickles, grape jam. All accompanied by a glass of fine local wine (Taurasi Paternopoli Montemarano).
