I grew up among the rolling hills of Le Marche, where rows of vines shape the landscape and summer wheat turns to gold. That’s where my cooking class begins: with memory, with the passion they passed on to me, and with the desire to make you feel at home. Together, we’ll knead tagliatelle the way it used to be done, cook mixed roasts in the rustic countryside tradition, and prepare desserts that smell like childhood and celebration. We’ll be immersed in the countryside, far from the noise, surrounded only by nature and a view that feels like poetry.

An authentic experience among flavors, smiles, and love for the land. Among the rolling hills of Filottrano, in the heart of the most genuine Marche region, we experienced something we will hardly forget. Entering Nicola and Francesca’s home, his sweet other half, was like opening the door to a world made of warmth, passion, and tradition. The hosts welcomed us with a rare kindness, immediately making us feel at ease, as if we were old friends. The atmosphere was intimate, attention to detail was evident, but above all it was filled with humanity and love for their land. The cooking class was a magical moment: between doughs, aromas, and local tales, we learned to prepare typical dishes using ingredients from the area, carefully selected and proudly presented. Every step was accompanied by anecdotes and stories linked to tradition: a real cultural journey through flavors. The dinner that followed was a triumph of taste and identity. Every dish spoke of the land, its products, and the hands that work it. You could feel the love with which everything had been conceived and cooked, in a perfect harmony between simplicity and refinement. The local wine completed the experience, making it even more authentic. It’s not just a dinner, nor just a course: it’s an encounter with people who put their heart into what they do, who cherish and proudly share their gastronomic culture. I truly enjoy making fresh pasta—rolling it out brings me back to childhood, and I love choosing which shape to make. I especially enjoy preparing tortellini and Cargiù, ravioli filled with sheep’s ricotta, wild herbs, eggs, and sausage, topped with my homemade farmyard ragù, thanks to the animals I raise myself. I also cook vincisgrassi, crescia from the Marche region, wild boar and hare ragù, and slow-leavened pizza using ingredients from my garden. In autumn, I make fig and plum jams with the fruits I gather near home, and Sundays always mean a good roast or an outdoor barbecue. I deeply love Marchigiana cuisine and I’m excited to share this passion through my cooking—genuine, simple, and full of heart.
