Making Traditional "Con la Coda" Tortelli

We’ll make fresh pasta dough with a delicate filling of ricotta and herbs, to be enjoyed with a mushroom sauce or with butter and sage, as tradition dictates.
We’ll be cooking in my kitchen at home, but, weather permitting, we’ll move out into the garden to prepare the tortelli whilst admiring the splendid view over the hills of the Oltrepò Pavese.
All accompanied by a good glass of wine to complement the meal.
