I wanted to give my menu the name from which it originates, the etymology of my city.

Trani was called TURENUM, linked to the Greek mythology of the god DIOMED, ​​whose son TIRRENO, would have founded the city With this traditional Tranese menu, I would like to give my guests aromas and ancient memories that have belonged to my family for years. Typical 3-course menu consisting of an appetizer, a first fresh pasta and a dessert, wine included, looks like this: Initial STARTER, in which my 7-grain FOCACCIA is the queen, which with its aromas emanating from extra virgin olive oil and cherry tomatoes, strictly produced by my family, accompany local cured meats and above all our unique cheeses, such as mozzarella and stracciatella from Puglia. Following, as FIRST COURSE, his Majesty "the RAGU 'of the holidays", accompanied by olive leaves, a fresh pasta format, with unique flavors ... the Ragù has always colored the days with its flavors and aromas. party of my family, managing to conquer the palate of all, both adults and children. The DESSERT ... to end this small journey of traditional flavors with a sweet tooth.
