Cooking is my way of expressing myself and sharing emotions — a legacy that began with my Andalusian grandmother and the scents of my childhood, between the sea, the mountains, and the traditions of Viareggio.My cooking is Tuscan, featuring typical recipes from Viareggio: boneless cacciucco, spaghetti with arselle (baby clams), red risotto with cuttlefish and chard, fresh pasta, gnocchi, intruglia (black kale farinata), matuffi (sweet polenta with sauces), marinated salt cod, poor man’s anchovies, and whitebait fritters.
