Paola

I bring to the table dishes from three borders: Austria, Slovenia, and Italy. From my birth family, typical peasant dishes of Friulian tradition like frico, dishes with vegetables from the garden that follow the seasons, or artisan cured meats (my husband is a charcuterie enthusiast). Steaming polenta also accompanies game dishes such as wild boar or roe deer. From my husband's family, I learned more Nordic and Slavic traditions like sauerkraut, goulash, and potica. I also enjoy working with sourdough to prepare bread and focaccia.

We were welcomed into Paola’s home and we felt at home. Never a dull moment, conversation flowed even without a translator. Family and food main topics. I was taught so many things that have come home with me to 🇨🇦. I’m missing Paola and her family and the delicious food. Thank you so very much for opening your beautiful home to us and including Hannah into preparations. She had a terrific time, so did ! Thanks again

We took a cooking class with Paola in Udine yesterday and are absolutely thrilled! ❤️ We booked the class through a website and didn't know exactly what to expect – but it far exceeded our expectations. The cooking class took place at Paola's home and was incredibly warm, authentic, and personal. Paola, her husband, and her daughter welcomed us so kindly. From the very first moment, you could feel how much passion and hospitality they put into organizing this cooking class. We not only learned a lot about Italian cuisine but also spent a wonderful time together. I would especially like to thank them for being so considerate of my foot injury. Thanks to this, I was able to enjoy the entire cooking class despite my limitation and feel comfortable at all times. We can truly recommend this cooking class to everyone from the bottom of our hearts and will definitely be back. Thank you so much for this unforgettable experience!

We had a wonderful and very relaxing evening with our host Paola and her family. We felt very welcome right from the start and enjoyed lovely conversations throughout the evening. The food was brilliant; we were even allowed to help out a little in the kitchen. Highly recommended for anyone who wants to experience authentic Friulian cuisine and spend a cosy evening with plenty of food, wine and lovely people.

A lovely experience at Paola’s house, who welcomed us, on a grey, rainy day, with the warmth of a lit fireplace… a beautifully set table with local dairy products and more… some made at home by her herself… Her husband was very friendly too, and between anecdotes and stories of life lived, and a good glass of Ribolla friulana wine, time literally flew by. We started the course with the basic dough for “pasta matta” and from there three sweet and savory recipes were created, which were then tasted once cooked. We had a good time and it was an experience different from others we have tried so far, and who knows if it will be repeated. The only discordant note… we would have expected, given the amount paid, to be gifted with an apron (as happened in other courses taken) and to receive a handout with the recipes made, the ingredients and the procedure. But unfortunately this did not happen… perhaps this note of mine can be useful for a future course… who knows… Thank you again to Paola and her husband. a good glass of Ribolka friulana

I had an excellent experience cooking with Paola. As a single guest, I basically had a private lesson in her home kitchen. Paola is a wonderful cook, a good teacher and an excellent host. She was well prepared so all her attentions went to teaching me and answering my many questions. The food was truly Friuli style, which I appreciated a lot. It all had a new twist to me, was all vegetarian on my request and most importantly was delicious. Paola added some local cheeses as a starter and proper caffe corretto after dinner. Adding to that, we made enough pasta to take about 2-3 portions home. Last but not least, Paola and her husband told me many stories and facts about the region and were a very friendly and welcoming couple to be with. All and all the only ‘down point’ I can think of, is that I couldn’t eat anything else all day, after so much delicious food 😉 If you’re looking for a truly local and delicious experience, Paola’s kitchen is definitely the place to be!
