"Everyone calls me Sara, short for Cesarina, a name inherited from my paternal grandmother, undisputed queen of the kitchen. Not only was she a model for me, but also my Mamma Liliana, my Aunt Ines, my mother-in-law Nunzia.

 

I have a nice potpourri of regional recipes that characterize me, being born in Lazio, then for love lived in Puglia and for choice landed in Umbria, where we formed family and created our home, nestled in the hills of Assisi. So why not become a real Cesarina.

 

I love cooking in all its facets: sweet, salty, preserved, but above all the pleasure of cooking for my family and my guests."

Our house nestled in the hills of Assisi is surrounded by a large olive grove and a well-stocked vegetable garden, which my husband Angelo manages and cares for with dedication and love.  Why is the title of this experience " What passes the Convent" ?  Simple, we are not going to the supermarket to buy produce that will be used in our cooking class.  With raffia baskets and knife we will take a leisurely walk and gather in our magnificent garden what nature gives us.  We will return home loaded with delicacies and turn them into delicious dishes, clearly seasoned with our strictly natural olive oil and finally we will sit at our table tasting our dishes washed down with a good local wine.

The Calendimaggio of Assisi is a festival celebrated on the first days of May to greet the arrival of spring, in which the two Parties into which the city is divided compete for the Palio, for the conquest of the city.  To live intensely the atmosphere of conviviality typical of Calendimaggio , I will accompany you to taste your choice of two typical dishes accompanied by an excellent local wine in the historic taverns , along the streets of Assisi, where you can eat served and surrounded by the Assisani, all dressed in traditional Medieval garb, for a total immersion in the life of the city in the 1300s.  Abandon contemporary life and indulge even for one evening only in a dip into the past, as only at Assisi's Calendimaggio is possible.

We are in Assisi and you absolutely have to taste the typical dishes of the city.  Let's open the lunch or dinner with the "Torta al Testo is the daughter of peasant culture, where bread was a luxury for poor families.  The ingredients are vjust water, flour and baking soda.  Its shape is typically round, once cooked it is cut into wedges and filled with what is most typical in Umbria. The most classic filling is with sausages and country herbs, or with typical cold cuts and cheeses  Let's continue with the Strangozzi, they have a centuries-old history and a particular name.  Obviously we will taste the Strangozzi with the Umbrian Black Truffle, a local delicacy.  At the end, the Rocciata di Assisi, the origin of the name derives from the word "perched", which in the Assisi dialect means round.

Take a seat at the comfortable tables of the Cesarine to savor forgotten recipes that have been treasured and handed down for generations.  During this cooking class in my home nestled in the hills of Assisi you will learn to prepare 3 typical recipes from my area: the typical "Strangozzi Umbri", gnocchi and ricotta and spinach ravioli.  Putting your hands to pasta is a rewarding experience and then tasting what you have created is truly a wonderful emotion.  Each participant will have his or her own station and will be actively working, equipped with a apron and a handout where the recipes will be explained, with ingredients and steps.  We will open our tasting of the created pastries with an appetizer of local products, all washed down with an excellent local wine.

Dessert what a passion, how can we live without them!  In my home in the hills of Assisi you will participate in a cooking class where desserts take center stage.  We will prepare together a variety of mouth-watering desserts: crusties, yeast cakes, fragrant cookies.  We will use the fruit from the kitchen garden to prepare excellent crusts with jams.  The fragrant smell of freshly baked cakes will pervade the kitchen at home, with special flavors and aromas that will remind one of childhood.  We will bake cookies following my family's historic recipes.  At the end of the preparations, we will taste our creations over a cup of coffee or tea, hot chocolate or nut liqueur, in front of a breathtaking view of the Assisi hills.

We are so thankful to Sara and Angelo for welcoming us into their beautiful home and providing exceptional hospitality. We were taught how to make Torta al testo, Tagliatelle, and Tiramisu and then we got to feast on these wonderful dishes. What a great experience! The view from their home is spectacular as are the gardens and olive trees. This was absolutely the highlight of our Italy trip so far. We are blessed to have them as friends. This is a must-do when in the area of Assisi. Sara (and Angelo) welcomed us into their beautiful home and spent time teaching us hands-on to make cheese biscuits, gnocchi, and tiramisu. She even made gluten free accommodations. Then we were treated to a wonderful aperitif and local wine. Their property is breath-taking amongst the garden and olive trees. Our evening with Sara could not have been better. She and Angelo were gracious hosts, welcoming my husband and I into their beautiful home, patiently teaching me to make strangozzi, torta al testo and tiramisu. It was a fabulous experience and one of the highlights of our ten days in Italy. I highly recommend a class with her. It was an authentic, memorable experience. I only wish we lived closer!

Sara and her husband Angelo were such wonderful hosts. They welcomed us into their beautiful home where they showed us their land and their olive grove. They spoiled us with great Italian hospitality. We learned how to make some of her signature dishes and we enjoyed dinner together with her and Angelo.
