Paola
La tradition hivernale la plus répandue dans ma région est la charcuterie. En Frioul, les plats sont agrémentés de jambon, de saucisses et de viandes de porc cuisinées selon des recettes transmises de génération en génération.
Mon mari est charcutier par passion et je propose un menu inspiré de mes souvenirs d'enfance, lorsque mon grand-père me dédiait un petit salami qu'il suspendait sur des barres pour le séchage avec mon nom. On commencera par un beau plateau de charcuterie accompagné de tortute, une spécialité de ma grand-mère que je vous montrerai comment préparer avec de la farine de maïs. Viendra ensuite le plat principal : des spécialités charcutières du Frioul comme le salami au vinaigre, le muset et les bruade, ainsi que des côtes tendres cuites avec de la choucroute. Pour finir, nous ferons des beignets aux pommes accompagnés d'une crème zabaglione chaude.
