Vegan dark chocolate and almond muffins

Ingredients
- For the muffins:
- 250 ml soy milk
- Almond essence
- 80 ml vegetable oil
- 250 g all-purpose flour
- 30 g unsweetened cocoa powder
- 150 g sugar
- 10 g baking powder (2 teaspoons)
- A pinch of salt
- 80 g dark chocolate
For the chocolate sauce:- Soy or rice milk
- Dark chocolate
- Brown sugar
- Potato starch
Method
For the muffins:
- In a bowl, combine flour, sugar, and cocoa powder, then add the baking powder.
- In a separate bowl, mix the soy milk, vegetable oil, and almond essence, whisking together. Add this mixture to the flour, sugar, cocoa, and baking powder, and mix well.
- Melt the dark chocolate in the microwave and add it to the mixture, stirring well.
- Divide the batter into paper muffin cups and bake in a preheated oven at 180°C (350°F) for 25-30 minutes.
For the chocolate sauce:
- Melt the chocolate over low heat, gradually adding milk.
- Once the chocolate is melted, add the sugar and a bit of potato starch to thicken the sauce.
- Serve warm.
