I am Elena Papa and I have had the opportunity to work for prestigious European and Italian noble families as a cook.Mousses are one of the elegant and versatile dishes that make a refined menu.
I will guide you through the step-by-step preparation of both sweet and savory mousses. They can be served either as an appetizer or main course, perhaps enhanced by a side of fish salad as in the famous Tomato Mousse where lobster is generally paired. Mousses are served with bread croutons. We will start with the preparation of the Chocolate Mousse in the vegan variant prepared with acqua faba, then we will make two more mousses one with Tomato and another with Ham. I will tell you the secrets of perfect making and pairings for a successful menu.
