In this cooking class, you will discover the secrets of Salento’s tradition by preparing four courses that celebrate fresh, genuine ingredients. We will begin with marinated anchovies with lemon and mint, followed by the typical ciceri e tria (fresh pasta with chickpeas). Next, we will prepare a delicious spigola (bass) in "acqua pazza" style, and to finish, we will enjoy classic Amaretti cookies together. Throughout the course, you’ll learn traditional techniques for working with fresh fish, as well as how to use wild herbs and seasonal ingredients, concluding with a tasting of local wines that complement every dish.
