During this cooking class, we will guide you step by step in preparing a three-course menu, from selecting the ingredients to creating the final dishes.

For the appetizer, we will make a buckwheat and cheese fritter, served with fresh chicory. For the main course, you will learn to prepare one of the classics of Valtellina cuisine: pizzoccheri, short buckwheat pasta with white flour and water, served with potatoes, Swiss chard, cheese, and butter from our alpine pastures. To finish on a sweet note, we will prepare a delicate sorbet. Join us for a fun, delicious, and hands-on experience in a warm and welcoming atmosphere!

We are Umberto and Fabrizio, two friends bound by a long and deep friendship. I’m Umberto, and I run a family-owned business dedicated to producing the most iconic product of Valtellina: Bresaola. I love good wine and fine cuisine. I’m Fabrizio, and since I was a boy I’ve loved testing myself in the kitchen. I enjoy cooking local ingredients with a touch of refinement and modernity, focusing on risottos, low-temperature cooking, and seasonal produce. Together, we create the perfect combination to welcome guests in a spectacular location with panoramic views of the Orobie Alps, preparing simple dishes reimagined in a gourmet style. Bresaola can take center stage, but we also offer alternatives such as game, fish, local cheeses, and zero-kilometer vegetables. Or, if you want to challenge us, we can cook your Mystery Box… We’re ready for the challenge!
