Silvana
Kurs und Menü mit drei Gängen: Passatelli aus Pesaro – das Rezept, das wir lernen werden – gefolgt von einem zweiten Gang und einem Dessert.
Zwei Stunden in meiner Landküche in den Hügeln von Ginestreto, wo wir die typischen Passatelli zubereiten, das erste Gericht der Stadt, das mit dem Gütesiegel De.Co. (Denominazione Comunale) ausgezeichnet ist und im Gegensatz zu denen aus der Romagna mit Fischbrühe serviert wird. In meinem Fall verwende ich die Köpfe von Baganelli – kleinen Weißfischen aus meiner Gegend –, die ich aus der Zubereitung des zweiten Gangs wiederverwende: gebackene Baganello-Filets mit Artischocken. Für die Zubereitung der Passatelli verwenden wir die Fer meiner Urgroßmutter, ein altes Werkzeug, das noch immer die Spuren all ihrer Zubereitungen trägt. Zum Abschluss des Menüs gibt es eine Tarte mit Waldfrüchten aus eigenem Anbau.

- We had an amazing afternoon / evening at Silvana’s place. Great aperative, and after an amazing piadina workshop. We had the most fresh ingredients to work with. Absolute recommandation to go here while you’re in the area of Pesaro. Silvana and Stefano are such lovely and welcoming people. We had an amazing time!
