The journey begins with the crunchiness of artisan Taralli, a prelude to an appetiser that celebrates the Alta Murgia: the creaminess of Burrata di Andria PGI, the enveloping aroma of Capocollo di Martina Franca and the strong character of Pecorino di Andria.
The first course is a tribute to the heart of the region: Orecchiette with fresh tomatoes, embellished with a generous sprinkling of savoury hard ricotta cheese. This is followed by the iconic Bombette con contorno, succulent and flavourful meat rolls, a symbol of the Valle d'Itria's brazieries. The finale is a sweet caress: the lightness of Tette delle Monache, soft clouds of sponge cake and cream.
