Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Shared Experience
Your experience

Join a unique cooking class and discover bagna cauda, a typical Piedmontese dish with an authentic flavor. Piedmont, inspired by neighboring Valle d'Aosta, has created unique recipes with local ingredients and excellent wines. Based on salted anchovies cooked in olive oil, bagna cauda is served with raw, roasted and fermented vegetables. Its preparation is a moment of sharing, between tradition and conviviality. Candlelight warms the room, providing a timeless atmosphere. This is my family's recipe, handed down from my Piedmontese grandparents. I am waiting for you for an unforgettable experience!

Our dining experience with Franca and her family is probably the best birthday gift I’ve ever received. My husband and I were welcomed very warmly and were able to watch and listen to Franca as she prepared the succulent fontina risotto. The meal included vol-au-vents with a fontina fondue as a starter, risotto, delicate veal with garden tomato carpaccio, and finished with baked peaches with amaretti biscuits. What a treat! Thank you infinitely, Franca, for your rare and excellent cuisine, as well as your very friendly welcome. I will highly recommend you to anyone who wants to discover not only Valdostan, Piedmontese and even other regions of Italian cuisine, but also to have the pleasure of meeting charming people. See you soon, I hope!

Valle d'Aosta is the ideal place to enjoy traditional dishes, visit castles and, in summer, gaze at the star-filled sky while surrounded by nature.  "I think I was born in the kitchen. I was lucky enough to have stay-at-home grandmothers who were very skilled in preparing local traditional foods," recounts Cesarina Franca.  Franca’s cooking is first and foremost based on using fresh products. She grows her own vegetables in the garden, collects wild herbs and mushrooms from the places her grandmothers took her to as a child. Everything else that she needs, such as eggs, cheese and meat, she buys near her home, directly from local breeders and farmers.  Since Valle d'Aosta is an area that combines Italian, French and Swiss traditions, Franca's cooking is full of surprises.
